Beets really don't get enough starring roles in recipes. They're kind of intimidating to new cooks especially, as they're an intense reddish purple hue that can taste funny at first. But they're oh so healthy for your cardiovascular health and make pretty salad mix-ins.
This week, Shea Hess has got the beet. She talks with Lauren Utvich of Garden of Eve farm about the different kinds of beets and what to look for at the market. Then she stops by Rye in Williamsburg for a chat with award-winning chef Cal Elliott. He shows us his wonderfully inventive creation: beet ravioli, and helps explain why every home cook should love beets. Finally it's back to the HiB kitchen for a simple beet, arugula, and goat cheese salad that pays homage to Cal's flavors and this delicious, beautiful vegetable!
